Begin your evening with an Oscietra caviar amuse-bouche, served on a delicate blini with lemon crème fraîche and chives, complemented by a glass of Perrier Jouët Champagne from Épernay, France—an indulgent start to what promises to be an extraordinary evening.

Next, enjoy a sophisticated Charcuterie selection featuring Wagyu bresaola, Prosciutto di San Daniele, Cacciatorini, and a free-range chicken, leek, and truffle terrine. Accompanied by pickled shallots, caper berries, watermelon radish, and a zesty gribiche, this course pairs beautifully with the vibrant Inkwell ‘Tangerine’ Viognier from McLaren Vale.

For seafood lovers, the Japanese Hokkaido Scallops Carpaccio is a must-try. This delicate dish, dressed with daikon, lotus, yuzu pearls, and umeboshi, is enhanced by the crisp notes of Hentley Farm Garganega from the Barossa Valley’s Mt Crawford.

The indulgence continues with a rich Gamekeepers Free Range Aylesbury Duck dish. Seared duck breast with five spice and a confit leg croquette is served with beetroot, quince, and braised witlof, all paired with the elegant Ashton Hills Estate Pinot Noir from the Adelaide Hills.

As a refreshing intermezzo, savour a vibrant Blood Orange and Campari before the main course.

For the heart of the meal, delight in the Stockyard Wagyu MB 7 Chuck Short Ribs—slow-braised for 12 hours to perfection. Paired with celeriac purée, daikon, and nasturtium, this mouthwatering dish is accompanied by Terre à Terre Reserve Cabernet/Shiraz from Wrattonbully, adding depth and richness to the flavours.

The evening draws to a close with a Celebration of Chocolate dessert, featuring morello cherries, passionfruit, and gold leaf, complemented by the Perrier Jouët Blason Rosé—an indulgent and sweet finale.

For the final touch, enjoy a selection of petit fours paired with the renowned Penfolds Grandfather Rare Tawny—a delightful end to a culinary journey that is nothing short of extraordinary.
